The Domaine de la Roche Noire sits atop the Ch\u00e9nas hills. Their vines cover 11 hectares and are spread between Ch\u00e9nas (0.70ha), Saint-Amour (2.25ha) and most of all Moulin-\u00e0-Vent. The vines benefit from varying levels of exposure, with most facing south and east.<\/p>\n
There are 10,000 vines per hectare, which are farmed using nonchemical control to preserve the environment. 80% of the grapes are destalked, one third is hot-macerated before fermentation and the rest is pressed and fermented traditionally, in fermenting tanks, racking and returning the wine according to the vintage.
