History
The vineyard is managed in organic agriculture, controlled and certified by ECOCERT (ploughing, grassing, scratching).
The vines are pruned using the simple guyot method.
Harvests :
Harvesting is done manually and mechanically.
Winemaking :
Traditional vinification in semi-carbonic maceration for 6 to 8 days.
Daily pumping over.
Pressing.
Aged at low temperature on fine lees.
Tasting
Shiny deep ruby colour. The aromatic expression of this cuvée spontaneously shows its personality on kirsch aromas and notes of undergrowth. Fine, racy and silky tannins support a dense and well-balanced body in the mouth. Subtly saline finish.
