Our Moulin à Vent cuvées, selected for ageing in new oak barrels, are the result of a rigorous selection process: – plots of old vines with south-east exposure in the appellation’s best climates.
– low yields producing highly concentrated wines that blend perfectly with the tannins of the wood during maturation in new oak.
For a minimum of six to eight months.
During this ageing, the barrel transmits torrefied and spicy aromas, bringing great complexity to this wine.
